胡葱喜冷凉的气候, 抗寒力强, 不耐炎热.
植株叶片的生长适温在22℃左右, 高于25℃时又生长不良.
鳞茎的生长膨大期则需20∼26℃的较高温.
在长日照条件下, 较高的温度将促进鳞茎的形成和膨大.
到夏季高温前形成较大的鳞茎, 到夏季高温期叶片黄化变软, 鳞茎进入短期的生理休眠越夏.

胡葱的根系浅生, 吸水能力弱, 要求经常保持土壤湿润, 尤以叶片生长盛期对水分的需要量更多, 但是不耐涝.
对土壤的适宜性较强, 喜肥, 适于种植在肥沃疏松、保水保肥力强的壤土中.

宜将胡葱幼苗期及叶片生长期置于短日照和较低的温度下, 小鳞茎膨大生长期安排在长日照和较高的温度条件下.

胡葱的根系浅而小, 整地要精细、平整, 基肥要腐熟细碎, 浅施匀施.

胡葱从种植到开始采收青葱约60天左右.

葱叶转黄变软垂即收获鳞茎, 晒干葱苗后挂在通风处贮存备用.

胡葱在南方不结种子, 但在北京郊区, 秋植胡葱于露地越冬后, 春末夏初抽薹开花, 6月上旬能收到种子, 只是采种量很低.播种后小苗生长较缓慢.

胡葱一般都用作调味料, 如蒸鱼需放葱花, 以胡葱的味道最好.
作汤面、汤粉等也用胡葱切成葱花, 煮好面条和粉后撒上青绿的葱花, 可促进食欲.胡葱的鳞茎及青叶也可与肉炒食或腌渍.胡葱中所含的硫化物具有降血脂的作用, 常食有益于健康.
